Farm recipes and food secrets from the Norske Nook

T’s father found this book at the church bazaar for 50 cents! He intended to give it to T’s aunt who collects this kind of recipes books. He left it on the coffee table and I started reading it one evening when we were hanging out at the in laws’ place.
The recipes book is fun to read, it has so many intriguing “old farmer” stories and cooking tips scattered among the recipes. One of the not so secret tips especially to those factories that make traditional biscuits/cookies/mooncakes in Malaysia, she used lard in her pie crust recipes!
Most of the recipes called for fresh produce and simple ingredients. I like that as I prefer to cook our meals from scratch with fresh ingredients instead of cooking from over processed ingredients.
I borrowed the book to try out some recipes and T’s father then decided to give it to me. :-)

Wanted to make another batch of fruit enzymes since last week, but was too lazy to get out of the house to buy the ingredients.
I have the apple enzymes and dragon fruit enzymes we made few weeks ago in the refrigerator and have been taking three times a day, 30 ml each time. At first, I drank the concentrated fruit enzymes directly, but now I prefer diluting it with 500 ml of water. Can’t really tell whether the fruit enzymes has any health benefit yet, as I just started drinking it 2-3 weeks ago. The first week when I started drinking the fruit enzymes, was feeling thirsty and dried mouth a lot. However, I do feel more energized lately, and the constipation problem has improved a lot. Hopefully that will solve the weight gain problem too. Though not a pills popping fan, it’s so tempted to check out the orovo reviews and bought a bottle! Putting on 30 lbs in the last three years was depressing!!

I don’t always cook a proper meal when hubby is not around, it’s too much work to cook up a storm just for one person.:-)
But, the other day, I find enough ingredients in the refrigerator to cook 3 dishes, so I decided to cook a nice meal for myself.



The down side is, I have to eat this same things for 3-4 meals. (I still have a little bit of left over of the bitter gourd in the refrigerator!) My meals usually are simple stir fry, soup, stew and healthy grilling. Though living alone, I prefer homecooked meals than eating out. You simply can’t control what additives they put into your food to make it tasty when you eat out, and I like to know what’s in my food!!

Since I am mostly alone at home for lunch and I don’t go out to eat, I often get asked what do I cook for one person?:-)
Actually I mostly cook very simple dishes that can be whipped up in a few minutes, other wise it would be casserole or soup that can be left alone simmering without much laboring in the kitchen.
I also try to have balance diet that contains a lot of fiber. Here is one of my signature dish :-). You just need two eggs and some vegetables. It’s almost always one of my end of the week dishes that used up all the left over in the refrigerator.

Can you figure out the ingredients? With healthy diet like this, who needs Leptitrex? :-)
