One dish meal

Since I am mostly alone at home for lunch and I don’t go out to eat, I often get asked what do I cook for one person?:-)

Actually I mostly cook very simple dishes that can be whipped up in a few minutes, other wise it would be casserole or soup that can be left alone simmering without much laboring in the kitchen.

I also try to have balance diet that contains a lot of fiber. Here is one of my signature dish :-). You just need two eggs and some vegetables. It’s almost always one of my end of the week dishes that used up all the left over in the refrigerator.

Can you figure out the ingredients? With healthy diet like this, who needs Leptitrex? :-)
